Ingredients:

  • 1 cup quinoa
  • 2 cups water

  • 1 cup broccoli florets
  • 1 carrot, sliced

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the water is absorbed. Fluff the quinoa with a fork and set aside.
  2. In a large pan or wok, heat the olive oil over medium-high heat. Add the onion and garlic, and sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the bell pepper, zucchini, broccoli, and carrot to the pan. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, honey, salt, and pepper. Pour the sauce over the vegetables and stir to combine.
  5. Add the cooked quinoa to the pan and stir to combine with the vegetables and sauce. Cook for an additional 2-3 minutes, or until everything is heated through.
  6. Remove from heat and garnish with sesame seeds and fresh cilantro, if desired. Serve hot and enjoy!
